Right off Interstate 15, right off exit 225 in Nephi, Utah there is a nice, unassuming little restaurant called One Man Band Diner.

The place has a nice throwback atmosphere and is a little unusual in that it actually lives up to the name by being entirely a one man operation. Back in the day, you couldn't spit without being in range of a nice, 50's style or inspired diner, but they seemed to all drop off the face of the earth at some point in the late 90s and another good chunk of them were blasted out of the sky with the "virus of unknown origin" not too long ago. However, these guys seemed to not only survive but thrived and it's good to see another good 'ol style diner stay strong out there with great food to boot.
